Nutrition is one of my key focuses as a professional athlete. I want to share with you some of my go-to recipes.
Today, I want to share one of my favorite beef recipes: kalbi short ribs. I couple the short ribs with two of my favorite side dishes: brown rice and green beans. Find my recipe below and let me know what you think in the comments!
Michael’s Kalbi Short Ribs
2-3 racks of flanken cut beef short ribs
Brown rice (find my favorite brown rice linked here)
Handful of green beans
2 cloves of garlic
Kalbi sauce (find my favorite linked here)
- To prepare the short ribs, I like to begin the cooking process by cooking the racks in some olive oil in a pan for about 1-2 minutes on each side so they are slightly brown. Then I remove them from the heat and use a kitchen scissors to cut the rack into individual ribs. I then add all the individual ribs into a saucepan with the kalbi sauce on medium-low heat and let the ribs finish cooking in the sauce. I like to garnish the ribs with some sesame seeds to finish.
- To make the brown rice, I like to use my rice cooker and follow the instructions on the rice cooker. You can also make your rice on the stovetop following the steps on the bag. I typically make 1 cup (cooked) to eat with my meals.
- To cook the green beans, I add some olive oil to a pan on medium-low heat. I add the green beans and cook for 2-3 minutes. I then mince 2 cloves of garlic and add them to the pan. I cover and cook until the green beans become plump, usually 7-10 minutes.
